2 packages frozen, sliced garlic bread
2 (24-oz.) jars spaghetti sauce
40 frozen Italian meatballs
2 cups shredded mozzarella cheese
¼ cup grated parmesan cheese
Preheat oven to 425 degrees. Heat the garlic bread with the spread side up on a baking sheet in the preheated oven until warm and golden brown, 10 to 12 minutes. Set aside to cool. Reduce oven temperature to 350 degrees. Bring spaghetti sauce to a boil in a large pot. Place the frozen meatballs into the spaghetti sauce. Reduce heat to low and simmer until meatballs are heated through, around 20 minutes. Tear garlic break into bite-size pieces and spread into the bottom of a 9×13 baking dish. Pour the spaghetti sauce and meatballs over the garlic bread, coating and distributing the meatballs evenly. Spread mozzarella cheese over the top in a layer, followed by a layer of Parmesan cheese. Put in the oven and bake until the cheese has melted 20-25 minutes.

Mid July and some things never change… it is HOT! I guess the heat, humidity and our youngest son being in a musical last week have made me a lazy cook, as you’ll see from this recipe (it’s not cooking; it’s dumping!) And you know what, that is OK. Not every meal needs to be a gourmet extravaganza. This week, sit back, relax and dump!
