2 lbs. hamburger
1 medium onion (chopped)
2 cloves garlic, minced
4 medium potatoes, peeled and chopped
1 can Rotel tomatoes
½ cup milk
1 can vegetable soup
1 can cream of mushroom soup
2 Tbsp. chopped parsley
Salt
Pepper
1 cup shredded cheddar cheese
1 cup mozzarella cheese
Fry hamburger with onion and garlic, drain well. Add chopped potatoes to hamburger mix and put in lightly greased 9×13 baking dish. Combine next 7 ingredients and stir well. Cover dish with foil and place in 375 degrees oven for about 1 hour (doesn’t hurt to remove foil and stir the casserole once during the cooking process). Take out of oven and top with shredded cheese and place back in oven till bubbly.
Hello, friends. I pray that each of you is safe, healthy, and that you have enough hand sanitizer and toilet paper. I can’t believe how much this country has changed since the last column I wrote. One thing I do know is that comfort food (and prayers) are both in order. Now with three “students” in my house for a while, I’m planning on recipes that will be easy to fix and tasty to eat. I’m not used to cooking lunches anymore! One thing we will begin doing every other day, writing actual letters to individuals that may be at high risk. If anyone wants us to write a friend or family member, please send me their address. Be wise and prayerful — and use this time to try a new recipe or two!
