1 Tbsp. butter
1 small onion, diced
1/2-1 Tbsp. finely chopped pickled jalapenos
1/4 tspn. ground cumin
4 oz. cream cheese, softened
1/3 cup sour cream
1 (10-oz.) can Rotel diced tomatoes and green chilies, drained
1 (15-oz.) can seasoned black-eyed peas, drained
Salt and pepper
1/2 cup shredded Mexican cheese or cheddar

Preheat oven to 350 degrees. Melt butter in a pan, add onion and cook until the onions are soft. Add remaining ingredients to pan except shredded cheese. Stir to evenly mix and remove from heat. Check for seasoning and add salt and pepper to taste. Transfer dip to a greased cast iron skillet or baking dish. Sprinkle shredded cheese on top. Place in oven and bake for 20 minutes or until warm and cheese is melted. Serve with tortilla chips.

Merry Christmas everyone! I hope everyone has a wonderful time with family, friends, and loved ones. It can be a hard time of year, too, I know, but in some small way, my prayer is that everyone felt a little love. I can now count on one hand the number of times we have ” A Christmas Carol” Performances (through Dec. 29). So, it’s on to New Year’s! I have decided in 2020 that I am going to do 55 things I have never done before, or maybe 55 things that bring me joy. I’d love to hear from all of you — what’s something that you’ve never done that you’d like to do? Give me some ideas. It doesn’t have to be anything big. Here’s one of mine: I’ve never driven a Ford Mustang, so I’m going to go to a car dealership and test drive one! And, in fitting with what I want to do, my word for the year is NEW. But I also want to the tradition of eating black eyed peas, so enjoy this dip while watching football …and may you see 2020 in a whole new light!
