1 egg

¼ cup chopped onion

½ cup seasoned dry bread crumbs

1 tablespoon extra-virgin olive oil

Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together. Form this mixture into patties.  If mixture is too dry, then add reserved liquid from the salmon. In a frying pan, heat extra virgin olive oil. Place patties in pan and brown on each side, while turning gently.  Drain on paper towels and serve.

With the two youngest Rauth boys in the Dominican Republic on a missions trip and the oldest away as a camp counselor, I can actually feed our entire family with this. My mother used to make salmon cakes and it was a special treat.  We didn’t get salmon very often. Say a prayer for the boys and enjoy our smaller household meal.
