4 hot dogs (soon to be octopus)
1-1/2 cups uncooked small shell pasta
1-1/2 cups frozen mixed veggies
1 cup Alfredo sauce (store bought)
Cheese flavored fish shaped crackers (Gold Fish)
Lay hot dog with end facing you. Starting one inch from one end, slice each hot dog vertically in half. Roll hot dog 1/4 turn and slice in half vertically again (you are making 4 segments that are connected at the top). Then, slice each in half again vertically (creating 8 “legs”). Place hot dogs in medium saucepan and cover with water. Bring to a boil with medium high heat. When it has boiled, removed from heat and set aside.
Prepare the pasta according to the packing. Stir in the frozen mixed vegetables for the last 3 minutes. Drain. Return to pan. Stir in Alfredo sauce and heat over low heat until heated through. Drain the octopus/hot dogs. Arrange one hot dog on top of the pasta (Shell) mixture on a plate. With mustard, draw two eyes on the octopus and serve. If you want to add more “fish,” add fish shaped crackers.
I hope everyone is enjoying this much warmer weather. The closest we got to the beach this past year was fixing this dish. With three different schools, two different spring break weeks, and a son in college (costly!), we shared a “stay-cation” — and it’s been great.
