Becca Hodges of Gallatin has opened It’s a Wrap in a bright electric-green concession trailer. She expects to travel in a 25 mile radius. She will be in Gallatin and Hamilton every week, the festivals in Jamesport, and also in Cameron and Trenton. When in Gallatin, the trailer will be parked on the west side of the square.

Becca previously worked at Elbert’s Department Store, but surgery limited her mobility. “Judy Elbert was a great boss and I will miss working with her, Ina and Margaret,” said Becca.

After retiring from the department store, Becca looked for something to do.

“I do love to cook,” said Becca. “But owning a restaurant was too much, too time consuming and too physically demanding.”

When her husband Bill asked her to imagine what she’d do if they ever qualified for free grant money (which they never did), she decided she’d have a food concession trailer.

“I could do it when I could and I wouldn’t have to be open too many hours a day,” she said. “And I’d serve something different. Not hotdogs or tenderloins. I would do something healthy, like a wrap.”

One thing led to another and the food truck moved from an idea to a reality. She and Bill traveled to Georgia over Easter break with granddaughter Makaylah and picked up a concession trailer.

True to her vision, It’s a Wrap will be healthy with lean meats and fresh fruits and vegetables. The 12-inch wraps include tomato basil, spinach, ultra grain, garlic herb and a cheesy jalapeno. There will be a selection of about four fillings and the menu will change weekly.

Her opening menus during the end of April were well received, despite the rain. She sold 37 wraps and they included chicken salad with pecan, cranberries, green apples and celery; southwest chicken with black beans and corn; turkey bacon ranch; Asian pork with five different grains of rice and sesame oil; crab salad; a vegetarian wrap with avocados and roasted vegetables and alfalfa sprouts or humus and vegetables; and one called Elvis.

“The Elvis wrap is meant for kids, but the adults were the ones ordering it,” said Becca. “It is made of bananas and honey and peanut butter.”

In the summer, It’s a Wrap will be doing all cold wraps and will carry a variety between chicken and albacore tuna.

“There will be a vegetarian wrap all the time on the truck,” Becca said.

When it gets colder again, she’ll add back the warmer wraps.

“Serving only really lean meat is important and the wraps are huge,” she said. “I tell our customers to cut it in half if they can’t eat it all at one time.”
