Cathy Kagey, owner of the new Subway on main street east of the square in Gallatin, said she is looking forward to the business opening this weekend, Oct. 9-10.
"With lots of hope and luck we anticipate being open on Saturday," Kagey said.
A lot of work was done to get the interior ready. The inside had been gutted and required all new electricity and plumbing. John White of Maysville is doing the construction work. Builders were delayed, waiting on a transformer which was set to arrive today (Wednesday, Oct. 6). The inside was stripped down to the original brick and made over in the theme of Subway, which is called Tuscany.
The Subway is located on the east side of the Gallatin business square and is open from 6:30 a.m. to 9:30 p.m. Monday through Sunday. A breakfast program includes egg sandwiches, cinnamon rolls, biscuits and gravy.
Kagey said she’d hired 12 people so far and would hire more if needed. The "sandwich artists" will do everything from baking the bread to making the sandwiches, to cleaning, inventory and manning the cash register. All of the new hires were from the area.
"We want it to be their store," she said.
Annette Brown of Pattonsburg is assistant owner and will be the main overseer of the financial aspects of the business.
"I’d like to thank the community for their patience," Kagey said.
