Erica Fenimore has opened Pinky’s in Pattonsburg. Pinky’s offers submarine sandwiches, pizzas, hamburgers, soups, convenience store items and groceries. You may eat-in or carry-out at the deli and call-ins are accepted.
Erica said she opened on Feb. 1 and has been doing a great business with lots of customers. Most of her customers are local, but she has had a few from I-35.
Erica, 21, grew up four miles north of Pattonsburg. She went to school at Bethany.
"I always wanted to open my own business," she said. "I knew there was a need in Pattonsburg for groceries and an inexpensive meal."
Chrissy Osborn is employed at the store. Erica’s mother, Rose Fenimore, and her sisters-in-law, Katie, married to Tyler, and April, married to Clinton, are also helping. Erica’s father is Greg, and she has a 5-month-old son, Tyson.
The store is located on the south side of Central Avenue. Erica will be getting a new sign soon for the front of the store. Right now, she has a large pink sign in the window. The name, Pinky’s, comes from Erica’s nickname.
